NO-CARB NUGGETS

INGREDIENTS

80g Cheesies

4 eggs

350g Chicken Fillets

Oil of your choice for frying (we used rice-bran oil)

 

METHOD

Crush your Cheesies as finely as possible. The finer the ‘crumb’, the easier it will be to coat the chicken. We used a glass and a plate to crush them but you could use a pestle and mortar or anything else suitable. Once crushed, spread over a plate or a chopping board.

Pour about 1cm of oil in your frying pan and start heating.

Cut your Chicken fillets into your desired nugget size. Whisk up the eggs in a bowl.

Take a piece of chicken, coat in whisked egg then roll in the Cheesies crumb mixture. Repeat this process as you go along for each piece of chicken. Avoid preparing all before cooking though or your Cheesies crumbs will go soggy with the egg.

Drop a small crumb in the oil to check it sizzles and is hot enough. Place the prepared chicken in the oil and cook for a good 2-3 minutes each side. You can probably cook 3 to 4 pieces without the oil getting too cool.
